Now that summer is in full swing, I have been craving fresh fish like there’s no tomorrow. Don’t get it twisted, I love fish throughout the year, but there’s something about summertime that really gets my taste buds going. When that craving hits, I know exactly what to make – Smokey Salmon Sliders.

This recipe is great for any summertime gathering, picnic, or even a meal for one. Grab some fresh salmon fillets, make the smokey seasoning and sauce, and pair it with some arugula on a slider bun. It’s a party in your mouth and only takes about 15 minutes to make!

Part of what makes this recipe so quick to make is that it only takes a few ingredients.

  • Smokey seasoning mix (which I’ll share in a minute)
  • 8 small salmon fillets (slider size)
  • 1 pack of slider buns
  • 2 Tbsp of mayonnaise
  • Fresh arugula

Making the smokey seasoning mix is pretty simple and that’s where I start. The featured seasoning in the mix is smoked paprika. A while back I accidentally bought smoked paprika, thinking I was getting regular paprika to sprinkle over deviled eggs. Needless to say, our deviled eggs had quite a different taste than usual. After that, the smoked paprika just sat in the cabinet because I really didn’t know how to use it. Now I use it on a few different dishes, including these Smokey Salmon Sliders, and wouldn’t bear to be without some in my seasoning cabinet.

Smokey Seasoning Mix

  • 1 Tbsp smoked paprika
  • 1Tbsp brown sugar
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp orange zest

Smokey Salmon Sliders

Once you’ve mixed everything together for the smokey seasoning, it’s time to start on the salmon. You may have to cut the salmon fillets so that they’re slider size. I usually buy a large fillet or two, and just cut it into smaller portions.

Then you coat the small salmon fillets with the smokey seasoning, saving about half a teaspoon of the seasoning for the sauce. Place the seasoned salmon onto a broiler pan and broil for about 10 minutes.

While the salmon is broiling, it’s a great time to prepare the sauce and buns. To make the sauce, simply combine the mayonnaise and the remaining smokey seasoning. Then spread the sauce on the buns. I like to use Martin’s Potato Rolls for my sliders (we love potato bread). You can also heat the buns in the microwave for about 15 seconds, if you like a softer bun.

When the salmon is done, let it cool for just a few minutes and then remove the skin. Place the salmon on the buns, top with arugula, and enjoy!

Ingredients
  • Smokey Salmon Sliders:
  • Smokey seasoning
  • 8 small salmon fillets (slider size)

  • 1 Tbsp smoked paprika
  • 1Tbsp brown sugar

Instructions
  1. Preheat the broiler.
  2. Prepare the smokey seasoning by mixing the smoked paprika, brown sugar, salt, pepper, and orange zest, in a bowl.
  3. Rub the smokey seasoning on top of the salmon fillets, saving about ½ teaspoon of seasoning for the sauce.
  4. Broil the salmon for 10 minutes.
  5. While the salmon broils, prepare the sauce by mixing the mayonnaise and remaining smokey seasoning.
  6. Start preparing the slider buns by spreading the sauce on them.
  7. Once the salmon is done, let it cool for just a few minutes and remove the skin. Then place on the slider buns and top with arugula.
  8. Enjoy!

I don’t know about your family, but mine eats a lot of chicken. Quite frankly, it’s an affordable protein, and there are many different ways it can be cooked and a countless amount of flavors it can be enjoyed with.

But sometimes we have leftover chicken and really don’t want the same thing two nights in a row. That’s when I turn to my easy 4 Ingredient BBQ Chicken Quesadilla recipe. While these can be enjoyed as a first meal, it’s a big time saver for me when I make it using leftover chicken and it helps me minimize how much food we waste.

So today, rather than telling you what I’m making time for, I’m going to share my 4 Ingredient BBQ Chicken Quesadilla recipe. It’s something that saves me time and allows me to fit other important things into my busy day.

Ingredients:

  • 1.5-2 leftover cooked chicken breasts
  • 16-20 small wheat tortillas (1, 16 oz. pack)
  • 2 cups honey BBQ sauce
  • 8-10 slices of cheese

Directions:

  1. In a blender, chop the leftover chicken breasts.

  3. Transfer the warmed chicken to a bowl and mix in 1 cup of BBQ sauce. If you like a lot of BBQ sauce, feel free to add more.

  5. Spoon some of the BBQ chicken mixture onto one of the tortillas.   6. Place 1 slice of cheese on top of the BBQ chicken. You can also use shredded cheese if you prefer.   7. Place the second tortilla on top of the cheese.
  8. Spray the skillet with non-stick spray (I like to use olive oil spray) and heat on medium-high.
  9. Cook the quesadilla on both sides until golden brown.
  10. Let cool, cut into fours (I use a pizza cutter) and enjoy.
*Note: You can also use the large tortillas. I have used them before and rather than using 2 tortillas to make a quesadilla, I simply fold the large tortilla in half. Just spread the BBQ sauce over the whole tortilla and then place the BBQ chicken mixture and cheese on only half of it. Then fold the other half over and cook.

This recipe yields 8-10 quesadillas, all depending on how much filling you use. And as a finishing touch, I love to dip my BBQ Chicken Quesadillas in ranch dressing or even sour cream. Yum!
