As a mom who cooks at home a lot, the menu tends to get a little boring after a while. I get in such a routine and so used to cooking the same things over and over, that some of my family’s favorite dishes eventually become not so favorites. Time is a big factor when deciding what to cook because hey, I’m busy and sometimes I want something simple to make. With the help of my new cookbook, I have over 100 recipes to try and each one is prepared or ready in 30 minutes or less.

What is this magical new cookbook? It’s Southern Living’s QUICK-FIX DINNERS: 100+ Simple Recipes Ready In 10, 20 or 30 Minutes. I’ve had the chance to try a few of the recipes, some more sophisticated than others, but the one thing they all have in common is they are quick and delicious!
The first recipe I tried was “Horseradish-Dill Salmon” and it took just 10 minutes. My family is already a big fan of salmon, but I have always baked it. This recipe had me pan sear the salmon and Oh. My. Tastebuds! I may never bake salmon again.
First of all, I never knew pan searing salmon fillets was so easy. And on top of that, I’ve always just used a simple seasoning. This recipe had me create a creamy horseradish-dill sauce (while the salmon cooked) and it could not have complimented the fish any better.
I served it with a side of white rice and roasted Brussels sprouts, and even drizzled some of the horseradish-dill sauce over the Brussels sprouts. Let’s just say this recipe has been bookmarked and I will definitely be making it again.

I often find that we run out of butter when I really need it for a recipe and that was the case when I wanted a grilled cheese sandwich a few days ago. I turned to this recipe and used mayonnaise instead, and boy was it good. It very well may have been the best grilled cheese sandwich I’ve ever had.
