Tasty Meals in 30 Minutes or Less + Giveaway

As a mom who cooks at home a lot, the menu tends to get a little boring after a while. I get in such a routine and so used to cooking the same things over and over, that some of my family’s favorite dishes eventually become not so favorites. Time is a big factor when deciding what to cook because hey, I’m busy and sometimes I want something simple to make. With the help of my new cookbook, I have over 100 recipes to try and each one is prepared or ready in 30 minutes or less.

What is this magical new cookbook? It’s Southern Living’s QUICK-FIX DINNERS: 100+ Simple Recipes Ready In 10, 20 or 30 Minutes. I’ve had the chance to try a few of the recipes, some more sophisticated than others, but the one thing they all have in common is they are quick and delicious!

The first recipe I tried was “Horseradish-Dill Salmon” and it took just 10 minutes. My family is already a big fan of salmon, but I have always baked it. This recipe had me pan sear the salmon and Oh. My. Tastebuds! I may never bake salmon again.

First of all, I never knew pan searing salmon fillets was so easy. And on top of that, I’ve always just used a simple seasoning. This recipe had me create a creamy horseradish-dill sauce (while the salmon cooked) and it could not have complimented the fish any better.

I served it with a side of white rice and roasted Brussels sprouts, and even drizzled some of the horseradish-dill sauce over the Brussels sprouts. Let’s just say this recipe has been bookmarked and I will definitely be making it again.

While the salmon dish may seem a little bit more for a sophisticated palette, QUICK-FIX DINNERS: 100+ Simple Recipes Ready In 10, 20 or 30 Minutes also helps you to take simple, everyday recipes and kick them up a notch.

For example, there’s a recipe called “The Ultimate Grilled Cheese.” Grilled cheese sandwiches are simple to make, right? All you need is some bread, cheese and butter. But have you ever tried mayonnaise on the outside of your bread, instead of butter? That’s exactly what this recipe does.

I often find that we run out of butter when I really need it for a recipe and that was the case when I wanted a grilled cheese sandwich a few days ago. I turned to this recipe and used mayonnaise instead, and boy was it good. It very well may have been the best grilled cheese sandwich I’ve ever had.

Because all of the recipes in QUICK-FIX DINNERS: 100+ Simple Recipes Ready In 10, 20 or 30 Minutes are quick meal options, I plan to work my way through all of them, marking which ones my family really enjoys. This way I can get out of my usual dinner rut and make tasty new dishes without compromising valuable family time. The best meals don’t have to be ones you work hours putting together.
