I really enjoy making sweet treats from scratch, but sometimes a few shortcuts aren’t bad either. This was definitely the case when I made brownies this weekend. I’ve been so busy, but wanted to treat my family to something fun and tasty, so I pulled out all the shortcuts I could to make some Easy Cream Cheese Marble Brownies.

The first shortcut? Using a box brownie mix. I have no shame in admitting that I actually save money and time by sometimes using a box brownie mix. But the taste is still there so my family gets to enjoy the chocolatey treat all the same. Whether you’re loyal to baking from scratch, or use a box brownie mix, there is no judgment here.

The second shortcut? My new Red Copper Brownie Bonanza from BulbHead. Ya’ll! This is a total game changer when it comes to baking brownies. You will never again have to hear your kids complaining about the other one got a bigger piece of brownie because with the Brownie Bonanza, each and every brownie is the same size. Simply place the tray into the pan, and for my Easy Cream Cheese Marble Brownies, mix up the box brownie mix per the box instructions and pour it over the tray.

Then mix up the cream cheese topping (full recipe below), dollop spoonfuls atop the brownie mix, and swirl it around. Swirl it up/down, left/right, around in swirls, however you want to.

Now, this is where the magic happens. Insert the grid for those perfect sized brownies and bake according to the box instructions.

When the brownies are done baking, remove them from the oven and let them cool. Only remove the grid once the brownies have cooled down. Aside from touching to know they’re cool, you’ll also notice the outsides of the brownies separate from the grid.

The ceramic nonstick, anti-scratch surface is one of the fun features of the Brownie Bonanza. The grid slides right out, leaving you with 18 perfectly sized brownies. I guess I should also mention that even though it’s a nonstick surface, I still took extra precaution and sprayed the pan and grid with nonstick spray.

Just look at those brownies! We’ve already finished off the ones I made over the weekend, but I think I need to make some more.

To make serving just as easy, place the cooling rack underneath the pan/tray and the tray of brownies will separate from the pan. Now all that’s left to do is enjoy!

I’ve finally found the pan of my dreams! Ha, sounds pretty funny, right? But I’m not kidding. I’ve been through quite a few “non-stick” and “non-scratch” pans that ultimately prove to be quite the opposite. After multiple uses, EVERYTHING starts sticking even after prepping with non-stick spray, and there are nicks and scratches all over them. What a waste of money!

Normally when I get a new pan, I immediately toss out all the packaging and give it a good wash before using. This time around, I did something different – I. Read. The. Directions. Who the heck ever reads directions for a pan? Why do pans even have directions? If you’re buying one, I assume you know how to use it. But ya know what, I actually learned something!

Before using the Red Copper Square Dance Pan, it is suggested that you season it. Season it? What the heck does that mean? Like when you season chicken? No, totally not the same thing.

Seasoning the Red Copper Pan consists of coating the interior with a small amount of vegetable oil and placing it in the oven at 300* F for 20 minutes. I’m starting to wonder if this is where I went wrong with all of those other pans that ended up in the trash. Oops!

After that it has been nothing but easy cooking with Red Copper. I’ve used it just about every day since getting it. I’ve made breakfasts of bacon, eggs and pancakes, of which I fit four pancakes in the pan at once. You can’t do that with a round pan. I’ve used it to make fried chicken and my new favorite dish – cooked cabbage (I’m totally addicted to cabbage these days).

All the while, nothing has stuck to the pan and no metal utensils have scratched the pan. On top of that, cleanup has been as easy as wiping it clean with a paper towel.

Take a look at this video of my cabbage dish in the works. I didn’t use any non-stick spray and threw the chopped bacon in the Red Copper pan with no prep to the pan at all. Not once did anything stick. (Sorry about the slight movement in the video. I couldn’t find my tripod for stabilization and was too hungry to search for it.)

 

When I was done cooking (and eating), you could see remnants of bacon grease sitting atop the pan. And even though I was totally eating out of the pan while waiting for the rest of dinner to finish, there are absolutely no scratch marks from my fork. What I didn’t eat out of the pan, easily glided right onto my plate. Then all I did to clean the pan was rinse with dish soap and hot water, and wipe it down. Easy peasy!

So non-stick the food dances right off!
