There’s a pretty good chance that I used to be the world’s worst cook when it came to a rack of ribs. I could never get the flavor or the tenderness I wanted. Since getting my Instant Pot, that has all changed! Now, I can throw down with the best of them. I’m talking a flavorful, tender, pull right off the bone, rack of ribs. Not to mention, mine are done in a fraction of the time. These Instant Pot Rack of Ribs are the best ribs I’ve ever made at home.

Most of the time when I think about cooking ribs, what immediately comes to mind is marinating them overnight, firing up the grill, and slow cooking them on the grill. I would never have imagined I could cook them in my Instant Pot. But I have to say, these are the most tender ribs I’ve ever made myself.

If you are the type who prefers to slow cook them on the grill, chances are you don’t do that in the winter months. Right? So this is a great alternative when you can’t fire up the grill or smoker. Me? This is now simply my go-to method no matter what time of year.

Ingredients

  • 1 full rack of ribs
  • Your favorite BBQ seasoning or rub
  • ½ cup of apple juice
  • ¾ cup of water

Directions

  1. Prepare your Instant Pot by placing the cooking rack in the bottom of the pot. Then pour the apple juice and water into the bottom on the pot.
  2. If using unseasoned pork ribs, generously coat the rack of ribs with your favorite BBQ seasoning or rub. You can let it sit and marinate if you prefer. This time around my local grocery store had pre-seasoned racks of ribs buy one get one free, so naturally I bought and used those.
  3. Flip the rack of ribs meat down/bones up so you can see/feel where the rib bones are. Every 3 ribs, cut the meat between the bones, creating 3 rib portions.
  4. Stack the rib portions in the Instant Pot, creating a sort of teepee effect.
  5. According to your Instant Pot’s instructions, pressure cook for 25 minutes. Then let it slowly de-pressurize for 10 minutes. Afterward, manually release any remaining pressure.
  6. Enjoy immediately as-is, with your favorite BBQ or meat sauce.Or you can add a little char by placing them on a hot grill for 2-3 minutes per side, then enjoy.

Note: Only one rack of ribs will fit in the Instant Pot at a time. If you are making more than one rack, you’ll need to cook them separately.

Notes
The cook time includes about 15 minutes for the Instant Pot to pressurize. This time may vary depending on the Instant Pot model you own.
