The holidays are the perfect time to enjoy a nice big, juicy ham. In my home, we even opt for a ham for Thanksgiving dinner. So when the holidays roll around, instead of leftover turkey, we have leftover ham. That means coming up with recipes that will help use up the leftovers, so they don’t go to waste. One such recipe and one that my family loves, is Ham & Asparagus Casserole.

What I love about this recipe is that it’s not only great for leftovers, but I can easily buy fresh cubed ham and have it any night of the year. It’s a little taste of Thanksgiving whenever I want. With a few simple ingredients, which I usually already have on hand, plus some cubed ham, this dish is so easy to put together.

Ingredients:

  • 4 cups of dry stuffing mix
  • 2 cups of Swiss cheese
  • 2 cups of fresh cut asparagus (uncooked)
  • 2 cups of cubed ham (cooked)
  • 1 can of Cream of Mushroom Soup
  • 2 cups of milk
  • 5 eggs
  • 1 Tbsp of Dijon mustard

Directions:

  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl, stir together the stuffing, cheese, asparagus, and ham.
  3. In a second large bowl, whisk together the soup, milk, eggs, and mustard. Pour this over the dry ingredients and mix well.
  4. Transfer the mixture to a greased baking dish and press it firmly into the dish.
  5. Bake for 45 minutes and serve hot.
