I really enjoy making sweet treats from scratch, but sometimes a few shortcuts aren’t bad either. This was definitely the case when I made brownies this weekend. I’ve been so busy, but wanted to treat my family to something fun and tasty, so I pulled out all the shortcuts I could to make some Easy Cream Cheese Marble Brownies.

The first shortcut? Using a box brownie mix. I have no shame in admitting that I actually save money and time by sometimes using a box brownie mix. But the taste is still there so my family gets to enjoy the chocolatey treat all the same. Whether you’re loyal to baking from scratch, or use a box brownie mix, there is no judgment here.

The second shortcut? My new Red Copper Brownie Bonanza from BulbHead. Ya’ll! This is a total game changer when it comes to baking brownies. You will never again have to hear your kids complaining about the other one got a bigger piece of brownie because with the Brownie Bonanza, each and every brownie is the same size. Brownie Bonanza comes in 4 pieces – pan, tray, grid, and cooling stand (not shown).

Simply place the tray into the pan, and for my Easy Cream Cheese Marble Brownies, mix up the box brownie mix per the box instructions and pour it over the tray.

Then mix up the cream cheese topping (full recipe below), dollop spoonfuls atop the brownie mix, and swirl it around. Swirl it up/down, left/right, around in swirls, however you want to.

Now, this is where the magic happens. Insert the grid for those perfect sized brownies and bake according to the box instructions.

When the brownies are done baking, remove them from the oven and let them cool. Only remove the grid once the brownies have cooled down. Aside from touching to know they’re cool, you’ll also notice the outsides of the brownies separate from the grid.

The ceramic nonstick, anti-scratch surface is one of the fun features of the Brownie Bonanza. The grid slides right out, leaving you with 18 perfectly sized brownies. I guess I should also mention that even though it’s a nonstick surface, I still took extra precaution and sprayed the pan and grid with nonstick spray.

Just look at those brownies! We’ve already finished off the ones I made over the weekend, but I think I need to make some more.

To make serving just as easy, place the cooling rack underneath the pan/tray and the tray of brownies will separate from the pan. Now all that’s left to do is enjoy!

Thai food is one of mine and my boyfriend’s favorites. We order it all the time and each time we do, I think to myself I need to figure out how to incorporate the bold and vibrant Thai flavors into dishes at home. And that’s exactly what I’ve done with this Thai Curry Lime Shrimp.

I cannot even begin to tell you how amazingly delicious it is. The curry offers up some heat and the lime adds a little sweetness. The two flavors are perfect compliments to each other. And it’s just like summer – a little hot and spicy, but sweet all the same!

Thai Curry Lime Shrimp

This Thai Curry Lime Shrimp recipe is an easy way to enjoy the bold and vibrant flavors of Thailand, right in your own home!
Ingredients
  • ¾ cup mayonnaise or Miracle Whip
  • ¾ cup Thai Green Curry Sauce
  • 1 fresh lime (juice and zest)
  • 6 cloves of garlic (minced)
  • 1 package of peeled/deveined medium shrimp (40-50 shrimp, thawed)
  • Tbsp olive oil (or coconut oil)
  • 3 tsp paprika
Instructions
  1. In a bowl mix the mayonnaise, Thai Green Curry Sauce, juice from the lime and 3 cloves of garlic. Set aside.
  2. In a non-stick pan, heat the olive oil over medium heat. Add 3 cloves of garlic, the shrimp (be sure to remove the tails) and paprika. Cook for about 5-6 minutes.
  3. Add the sauce mixture to the shrimp and simmer until warm.
  4. Serve over pasta (angel hair pasta works great) or rice. For a healthier option, serve over spiralized zucchini.
  5. Top with lime zest and enjoy!
Notes
This recipe is just as delicious with chicken instead of shrimp!

If you’re wondering about the Thai Green Curry Sauce, it can be purchased at Aldi. At least, that’s where I get it. I don’t know if it’s available in other stores, but if it’s not and you don’t have an Aldi near you, the sauce can easily be substituted with a different curry sauce or maybe even try a sweet chili sauce.

Strawberry Streusel Squares Made from Our Freshly Picked Strawberries

Last week I took my family strawberry picking for the first time. It was a great way to get everyone out of the house and enjoy a little family time together. It was a simple outing, but the kids had a lot of fun picking their own fresh strawberries. And though my son doesn’t eat them (because of the picky eater he is), even he enjoyed it.

We arrived at Farms View Roadstand sometime in the afternoon. Luckily, it was a really nice day out with temperatures in the high 60’s, the perfect day for strawberry picking. The staff kindly gave us the rundown and directed us to the strawberry plants out in the field. Then we were off!

I had no intention of picking and buying as many strawberries as we did, but once we saw them and got to work, we had a box full in no time. We bought just over 2.5 lbs. of strawberries!

When we buy strawberries from the store, about half of the package typically goes bad before we get around to eating them, so I had no idea what we were going to do with all of these. But we’ve had no problem this past week going through the 2.5 lbs. we picked from the farm.

When we got home, I decided to bake us up some Strawberry Streusel Squares and boy were they delicious. They were gone by the next day!

Strawberry Streusel Squares

These Strawberry Streusel Squares will have your family working hard on the farm, growing and picking their own fresh strawberries for their favorite spring time treat!
Ingredients
  • ¼ cup brown sugar
  • ½ cup white sugar (break down into ¼ cups)
  • 1½ cups of flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ tsp cinnamon
  • ½ cup butter (1 stick, cold and firm)
  • 1 egg (beaten)
  • 1 tsp vanilla
  • 2 cups freshly chopped strawberries
Instructions
  1. Preheat oven to 375 degrees and prepare a square dish by lining it with parchment paper (if you don't have parchment paper you can also spray the dish with non-stick spray). Parchment paper allows for quicker cooling time and easy cutting.
  2. In a bowl, mix the dry ingredients (brown sugar, white sugar, flour, baking powder, salt, cinnamon). Only use ¼ cup of the white sugar.
  3. Add the butter, egg and vanilla to the bowl and do a rough mix. It's easier to slice the stick of butter before adding it to the bowl and I suggest using your hands to do the rough mix. The mixture should be a thick, crumbly consistency when ready.
  4. Place half of the mixture into the bottom of the dish. Mash it into the dish so it creates a solid base.
  5. In a separate bowl, mix together the strawberries and a ¼ cup of white sugar. Add the strawberry mixture to the dish, spreading it evenly.
  6. Crumble the remaining streusel mixture on top of the strawberries. It's okay if the remaining mixture doesn't cover the entire top of the strawberries.
  7. Place in the oven for 35 minutes and when done remove the dish from the oven. Then, using the parchment paper, remove the treat from the dish and place on a cooling rack.
  8. Let it cool completely before cutting into squares (9 or 12 squares).

This recipe only used up a small portion of the strawberries we had picked, so I had plenty left to make a second batch of Strawberry Streusel Squares. As for the rest of them, we’ve just been snacking on fresh strawberries all week. I can’t wait until we go strawberry picking again!

Octonaut Fish Biscuits (Sugar Cookies)

Honorary Octonauts have to be prepared for any kind of creature they encounter on their Octopod adventures, so I've taken a cue from Tunip and the Vegimals and baked up some Fish Biscuits just in case they come across some hangry marine life.
Ingredients
  • 1 cup of sugar
  • 3 cups of flour
  • 2 tsp of baking powder
  • ½ tsp of salt
  • 1 cup of softened butter
  • 1 egg
  • ½ tsp vanilla extract
Instructions
  1. Prepare a cookie sheet and preheat the oven to 350 degrees.
  2. Combine the sugar and softened butter until smoothly mixed.
  3. Add the egg and vanilla, mix well.
  4. Add the baking powder and salt, mix well.
  5. One cup at a time, mix in the flour until the cookie dough consistency is thick but not too crumbly.
  6. Prepare a surface sprinkled with a little flour and be sure to lightly flour your rolling pin so it doesn't stick to the dough.
  7. No chilling of the dough is required so this is quick and easy! Just take a nice big handful of dough and roll it out evenly on the floured surface.
  8. Using a small fish cookie cutter, cut enough fish biscuits to fill your cookie sheet.
  9. Bake for 7 minutes and then remove the cookie sheet from the oven. Place the fish biscuits on a cooling rack and after a minute or two enjoy!

 

This fish biscuit recipe yields about 120 fish biscuits if using these small cookie cutters I got from Amazon. I used the larger of the three that come in the pack. I like these because they’re the perfect bite size and will help us feed more hangry marine creatures on our adventures with the Octonauts! If using a larger cookie cutter, the recipe will obviously yield fewer fish biscuits.

I am all about kitchen tools that make prep time quicker and easier, and that’s exactly what the Brieftons Vertico Spiralizer does. I’ve been craving sweet potato curly fries, but haven’t been in the mood to spiralize the sweet potatoes with my hand-held twist/turn spiralizer.

It’s so time consuming and takes too much effort. It’s not that I’m lazy, but simply that I have other things to do than spend all day on food prep. There already aren’t enough hours in the day and I’m making time for things that are more important than spiralizing sweet potatoes.

That’s why I was so excited when my Brieftons Vertico Spiralizer arrived. I knew I was going to satisfy my craving, while cutting the prep time way down! Out of the box, I gave everything a good wash, pieced it together (it was very easy) and got right to spiralizing.

 

As mentioned in the demo video, there are four settings to choose from. Setting one offers larger spirals, while setting four offers the thinnest spirals. For purposes of the sweet potato curly fries, setting three was just what I needed.

I love how quickly I was able to get all of the sweet potatoes spiralized. It literally took one to two minutes to do four potatoes versus up to 10 minutes with my hand-held twist/turn spiralizing tool.

With the Brieftons Vertico Spiralizer the size of the veggie doesn’t really matter, whereas for my hand-held tool, I would oftentimes have to cut the veggie down for it to fit. And of course that meant more work and a longer prep time. No thanks! I’d rather work smarter, not harder.

And when I’m done, cleanup is super easy too. I just toss it in the dishwasher!

Sweet Potato Curly Fries

Sweet Potato Curly Fries have never been easier to make! Garnish with green onions, ketchup, sour cream (my fav) or even your own special sauce, and it's a dish the whole family will love!
Ingredients
  • 4 sweet potatoes
  • Olive oil spray
  • 1½ tsp. paprika
  • ¾ tsp. salt
  • 1 tsp. sugar
  • 1 tsp. dried oregano
  • 1 tsp. garlic powder
Instructions
  1. Preheat oven to 400*.
  2. Spiralize the sweet potatoes and set aside.
  3. In a large Ziploc bag, combine the dry ingredients - paprika, salt, sugar, oregano and garlic powder.
  4. Lightly spray the potatoes with olive oil spray and place in the bag. Shake it up, coating the potatoes with the seasoning.
  5. Coat an oven safe, non-stick pan with a layer of olive oil spray and dump the contents of the bag on the pan. Spread the potatoes for even cooking.
  6. Bake for 15 minutes. Then flip potatoes over and bake for an additional 10-15 minutes.
  7. Garnish and enjoy!

With Valentine’s Day just around the corner, I’m sure many people are looking for something sweet to give their special someone.  We hear all the time that homemade gifts are better than store bought gifts, but let’s face it – that’s not necessarily always true.

BUT, it is SO true when it comes to this No Bake Reese’s Peanut Butter Cheesecake.  I mean, need I say more?  Reese’s Cups. Peanut butter. Cheesecake. HELLO?!  My mouth is watering just looking at a piece.

And I don’t know about you, but I love gifts that are edible.  Don’t get me wrong, flowers and jewelry are nice and all, but give me something yummy to eat and you have my attention.

So, if you’re looking for the perfect Valentine’s Day gift or even just something to send things over the top, this recipe is for you.  It’s all homemade with nothing but love, straight from the heart.

No Bake Reese's Peanut Butter Cheesecake

This delicious cheesecake is super easy to make at home and because it's no bake, you really can't mess up.
Ingredients
  • 25 Oreos
  • 5 Tsbp melted butter
  • 3, 8 oz. blocks of cream cheese (24 oz. total)
  • 1.5 cups creamy peanut butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 8 oz. Cool Whip (1 tub)
  • 25-30 Reese's Miniatures
  • Optional: Chocolate syrup
Instructions
  1. Refrigerate the Reese's Miniatures so they keep their shape.
  2. Using a food processor (I used my Nutribullet, haha), crush the Oreos and transfer to a bowl.
  3. Add in the melted butter and mix well.
  4. Press the Oreo crust mixture into the bottom of a spring-form pan (a pie dish works as well).
  5. Refrigerate crust for at least 30 minutes to set.
  6. Mix together the cream cheese, peanut butter, powdered sugar and vanilla, until well blended.
  7. Fold in the Cool Whip until well mixed.
  8. Cut the Reese's Miniatures into quarters and fold half of them into the mixture.
  9. Pour the mixture over the Oreo crust and spread it evenly.
  10. Place the remaining cut up Reese's Miniatures across the top (or around the outer ring if you want to be fancy).
  11. Refrigerate for 5 hours.
  12. Remove spring-form pan's outer shell and enjoy!
  13. Optional: Add chocolate syrup over the top.
Notes
If you want to put a little bit of a spin on it, use crunchy peanut butter instead of creamy.

Chicken is a staple in my house. Any time I see chicken on sale I stock up, even if I have to freeze it. It doesn’t matter if it’s wings, legs, thighs, breasts or in this case, the whole chicken, my family is all over it.

But this also means we eat a lot of the same chicken recipes over and over. A couple of weeks ago I decided to try something different and cook a whole chicken in my crockpot. Let me just say that I have never gotten a bone so clean in my entire life. Not only was the chicken moist and delicious, but it literally fell off the bone! I couldn’t even pick up the whole chicken to get it to the cutting board without it just falling apart.

Now, I know there are tips and tricks to prevent the whole chicken from falling apart when cooked in a crockpot, but I actually enjoy how moist and flavorful the chicken is when it cooks in it’s own juices. And apparently, so does my family. We ate on this whole chicken for three days (talk about affordable!), preparing the leftovers in different ways.

There’s no doubt I will be cooking whole chickens in the crockpot in the future and will be trying different seasoning variations. This time around I used fresh garlic, thyme and lemon, along with the basic salt and pepper. Delicious!

Crockpot Fall off the Bone Whole Chicken

This crockpot recipe for slow cooking a whole chicken will leave your chicken moist, juicy and bursting with flavor. And did I mention, it will literally fall right off the bone?
Ingredients
  • 1 whole chicken (5-6 lbs.)
  • 1 head of garlic
  • 3 lemons
  • 1 bundle of fresh thyme
  • Salt
  • Pepper
Instructions
  1. Rinse and slice the lemons. Set aside.
  2. Peel the entire head of garlic so you have individual cloves and cut each clove in half lengthwise. Set aside.
  3. Remove the chickens innards (usually packaged in a bag you can simply pull out) and rinse the chicken well under cold water. Pat dry.
  4. Season the entire chicken, inside and out, with salt and pepper to taste.
  5. Layer the bottom of the crockpot with slices from 1 lemon, the garlic cloves (leave about 4 cloves set aside) and a few sprigs of thyme.
  6. Stuff the inside of the chicken with the slices from 1 lemon, 4 cloves of garlic and a few sprigs of thyme.
  7. Tuck the chicken legs/thighs under and place the chicken in the crockpot.
  8. Top the chicken with the remaining lemon slices and thyme.
  9. Cook on high for 4 hours.
Notes
If you want to make it a one pot meal, try adding chopped vegetables around the chicken. Think potatos, carrots, celery and onions. Oh my yum!
