Now that summer is in full swing, I have been craving fresh fish like there’s no tomorrow. Don’t get it twisted, I love fish throughout the year, but there’s something about summertime that really gets my taste buds going. When that craving hits, I know exactly what to make – Smokey Salmon Sliders.

This recipe is great for any summertime gathering, picnic, or even a meal for one. Grab some fresh salmon fillets, make the smokey seasoning and sauce, and pair it with some arugula on a slider bun. It’s a party in your mouth and only takes about 15 minutes to make!

Part of what makes this recipe so quick to make is that it only takes a few ingredients.

  • Smokey seasoning mix (which I’ll share in a minute)
  • 8 small salmon fillets (slider size)
  • 1 pack of slider buns
  • 2 Tbsp of mayonnaise
  • Fresh arugula

Making the smokey seasoning mix is pretty simple and that’s where I start. The featured seasoning in the mix is smoked paprika. A while back I accidentally bought smoked paprika, thinking I was getting regular paprika to sprinkle over deviled eggs. Needless to say, our deviled eggs had quite a different taste than usual. After that, the smoked paprika just sat in the cabinet because I really didn’t know how to use it. Now I use it on a few different dishes, including these Smokey Salmon Sliders, and wouldn’t bear to be without some in my seasoning cabinet.

Smokey Seasoning Mix

  • 1 Tbsp smoked paprika
  • 1Tbsp brown sugar
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp orange zest

Smokey Salmon Sliders

Once you’ve mixed everything together for the smokey seasoning, it’s time to start on the salmon. You may have to cut the salmon fillets so that they’re slider size. I usually buy a large fillet or two, and just cut it into smaller portions.

Then you coat the small salmon fillets with the smokey seasoning, saving about half a teaspoon of the seasoning for the sauce. Place the seasoned salmon onto a broiler pan and broil for about 10 minutes.

While the salmon is broiling, it’s a great time to prepare the sauce and buns. To make the sauce, simply combine the mayonnaise and the remaining smokey seasoning. Then spread the sauce on the buns. I like to use Martin’s Potato Rolls for my sliders (we love potato bread). You can also heat the buns in the microwave for about 15 seconds, if you like a softer bun.

When the salmon is done, let it cool for just a few minutes and then remove the skin. Place the salmon on the buns, top with arugula, and enjoy!

Instructions
  1. Preheat the broiler.

  3. Rub the smokey seasoning on top of the salmon fillets, saving about ½ teaspoon of seasoning for the sauce.
  4. Broil the salmon for 10 minutes.
  5. While the salmon broils, prepare the sauce by mixing the mayonnaise and remaining smokey seasoning.
  6. Start preparing the slider buns by spreading the sauce on them.
  7. Once the salmon is done, let it cool for just a few minutes and remove the skin. Then place on the slider buns and top with arugula.
  8. Enjoy!

One Pan Chicken Fajitas

When life gets busy, sometimes dinner gets forgotten. Instead of ordering out, quick and easy one pan meals are a great solution. Not only are they quick to cook, but cleanup is a breeze. One of my family’s favorites is this recipe for chicken fajitas. There’s not even a single slice of pepper left when we’re done eating.

I like to start by making my own homemade fajita seasoning. On really busy nights though, a store bought pack does the job just as well.

Homemade Fajita Seasoning:

  • 1 Tbsp of chili powder
  • 1 Tbsp of cumin
  • 1 Tbsp of paprika
  • 1/2 tsp of oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder

Simply mix the seasonings together in a bowl and set them aside.

Fajita Ingredients:

  • 1 lb. of boneless, skinless chicken thighs
  • 3 bell peppers (1 green, 1 red, 1 yellow)
  • 1 medium yellow onion
  • Salt & pepper
  • 1 pkg of 8 small flour tortillas

Thinly slice the chicken thighs into fajita size slices. Then season them with salt and pepper, and add HALF of the fajita seasoning. Coat all of the chicken well and place it on one side of a prepared sheet pan.

Thinly slice all 3 bell peppers and the onion, placing each in a row on the sheet pan. Then drizzle the vegetables with olive oil and coat with the remaining fajita seasoning.

Once everything is coated well, mix the chicken and vegetables together. This will ensure an even cook throughout. All that’s left is to bake and get your fajita on!

I like to add a splash of fresh lime juice and chopped cilantro over the chicken and vegetables once they come out of the oven. It adds even more flavor to the already delicious fajita seasoning. Once on the tortilla, a little sour cream is another favorite of mine to add.

  • Fajita Seasoning:

  1. Preheat the oven to 425 degrees.
  2. Prepare a sheet pan with parchment paper. (Aluminum foil or the sheet pan itself also works. Just be sure to spray with non-stick spray.)
  3. In a small bowl, mix everything for the homemade fajita seasoning. Set aside.
  4. Thinly slice the chicken thighs into fajita size slices. Season with salt and pepper. Then add HALF of the fajita seasoning, coating all of the chicken well. Place the chicken on one side of the sheet pan.
  5. Thinly slice all 3 bell peppers and the onion. Place each in a row on the sheet pan. Drizzle the vegetables with olive oil and coat with the remaining fajita seasoning.
  6. Now mix everything together, the chicken and vegetables.
  7. Bake for 20 minutes.
  8. Remove from the oven and enjoy on flour tortillas! You can add the juice of 1 lime and sprinkle with fresh cilantro for some extra flavor.

Summer is the best time to make homemade popsicles. But popsicles can go beyond putting juice or Kool-aid in popsicle molds. Why not turn your favorite desserts into a refreshing, frozen treat for a hot summer day? That’s exactly what I did with one of my favorite desserts, strawberry cheesecake. And let me tell you, the whole family loved these Strawberry Cheesecake Popsicles.

Any dessert can be a refreshing summer dessert when turned into a popsicle, just like these Strawberry Cheesecake Popsicles.
Ingredients
  • 1 cup of graham crackers (crushed)
  • 4 Tbsp of melted butter
  • 1, 8 oz. package of cream cheese
  • 2 cups of strawberries (halved or quartered)
  • ½ cup of powdered sugar
  • ⅓ cup of milk
  • ¼ cup of strawberry cheesecake or vanilla yogurt
Instructions
  1. In a bowl, thoroughly combine the crushed graham cracker and melted butter. Set aside.
  2. In a food processor or mixer, combine the cream cheese, strawberries, powdered sugar, milk, and yogurt. Mix into a smooth texture.
  3. Fold HALF of the graham cracker mixture into the popsicle filling.
  4. Spoon the popsicle filling into popsicle molds, leaving some room at the top/base for graham cracker crust.
  5. Spoon the remaining graham cracker mixture into the popsicle molds, firmly pressing into place.
  6. Freeze and enjoy!

Easy 6 Ingredient Guacamole

“Guac is extra.” Um, yea, I know that, but I want it anyways. I mean really, is there even a question about that, haha. I get this every single time I visit my favorite burrito spot. And after going the other day, I got to thinking. When I make tacos of any kind at home, I never have guacamole on them.

The reason is that I don’t like store bought guac and I’ve always thought it was too difficult or time consuming to make. While I still stand by my opinion of store bought guac, I was completely wrong about how easy it is to make. With this easy 6 ingredient guacamole recipe, I’ll never have a taco or chips without guac again.

I’m not going to lie. When I was making this recipe to photograph, the photos almost didn’t happen because I was eating the guacamole the entire time. It was a chips and guac kind of day and I went all in. But I managed to get a few good shots so you can see just how easy and delicious it really is.

Whether you want that extra-ness to your taco, burrito, nachos, chips, or are ready to celebrate Cinco De Mayo, this is hands down the easiest guacamole recipe you’ll ever try.

I always start by preparing all of the ingredients (full ingredient list and measurements below) so that once I get started it’s quick and easy going. I hate stopping to chop this or mince that. For this recipe you need avocados, diced tomato, diced red onion, chopped cilantro, minced garlic, and lime juice.

Since college I have wanted a rice cooker. Why? Because I have to be the worst in the world at cooking rice. Every single time I’d cook rice, it would come out a big pot of mush. I thought it was impossible to get perfect, individual grain rice without a rice cooker. That is, until I discovered the secret to cooking the perfect pot of rice.

So what’s the secret? The directions on the package are a lie! A big lie! I have yet to follow the directions on any rice package and have the outcome I want. However, I have discovered the perfect rice cooking formula and since implementing it, there hasn’t been a pot of mushy rice in my house. And there’s no rice cooker needed!

What’s the lie rice packaging has been, and is still, telling us? Most packaging says to use 2 cups of water for every cup of rice. Wrong! This is why my rice used to come out so mushy. That’s just too much water. You only need 1 1/4 cups of water for every cup of rice you’re cooking. My favorite Jasmine rice indicates to use 1 1/2 cups of water, which is closer, but still not quite perfect.

How to Cook the Perfect Pot of Rice

Use this rice cooking formula on ANY type of rice and you’ll never have mushy rice again.

  1. Combine water and dry rice in a pot, over medium heat. (1 1/4 cups of water for every cup of rice)
  2. Cover and cook until it comes to a rolling boil. Then reduce the temperature to low.
  3. Once the water has completely reduced, turn the burner off, stir the rice, cover and let sit for 10-15 minutes. Letting it sit covered will allow the rice to steam itself done.
  4. Enjoy the perfect pot of rice!

*Note: It’s important that you stir the rice once the water has reduced. If you don’t stir, you will end up with uncooked grains along the top.

While I still did the apple peeling and cutting, my son was able to handle the rest. I helped identify the correct measuring cups for each ingredient and from there he was able to create the crispy topping, mix it up, and put it all together. Then using the cute little doggy potholder that came in his Kidstir box to use with this recipe, he helped carefully put the dessert in the oven.

The final result was delicious! The recipe included ingredients and directions for making our own whipped topping, but we cheated a little and bought store-ready whipped topping instead. Peachy Green Smoothie + Alkamind Boost

Mornings are about to get really rough for me. My son starts school tomorrow and that not only means early mornings for him, but early mornings for me too. Ugh! I’ll be the first to admit that when I’m rushing around and have what feels like the longest to-do list ever, I don’t always reach for healthy snacks. But with school starting and early mornings beginning soon, I need an easy way to implement healthy, energizing snacks into my day. That’s exactly what my Peachy Green Smoothie is, with a little extra superfood boost from Alkamind Daily Greens.

Peachy Green Smoothie + Alkamind Boost

Ingredients

  • 1 cup fresh or frozen spinach
  • 1 banana
  • 1/2 cup fresh, frozen or canned peaches
  • 1/4 cup milk
  • 1/2 cup plain yogurt (peach or vanilla flavor works well too)
  • 1 packet Alkamind Daily Greens
  • 1/2 cup ice

Directions

  1. Combine the packet of Alkamind Daily Greens into the milk until well mixed.
  2. Blend all ingredients and the milk mixture in a blender.
  3. Enjoy!

*Note: If you skip step 1 and go straight to blending everything, you may find the Alkamind Daily Greens don’t completely incorporate, and you’ll end up with dry flaky-like textures in your smoothie.

Before I get to the actual recipe, you’re probably wondering what makes tea a “super” tea. A main ingredient in this recipe is one of Tetley’s vitamin-infused Super Teas, Immunity Peach & Orange Super Tea. It’s packed with 20% of the recommended daily intake of vitamin C, which helps to support the immune system. It’s a “super” tea!

And with cooler weather starting to roll through, I know I need all the immune system support I can get. Even better that I can get that extra support in a delicious beverage! Okay, so on to this delicious recipe!

Ingredients

  • 1 teabag of Tetley Immunity Peach & Orange Super Tea (with Vitamin C!)
  • 1 cup of water
  • 1/3 cup of ginger ale
  • Glass of ice

Instructions

  1. Bring cup of water to a boil .
  2. In a cup, pour the boiled water over 1 Tetley Immunity Peach & Orange Super Tea teabag, and let it steep for 5 minutes.
  3. Remove the teabag and allow the tea to cool.
  4. Once the tea is cool, pour it into the glass of ice.
  5. Top it off with ginger ale and enjoy!
