How to Cook the Perfect Pot of Rice

Since college I have wanted a rice cooker. Why? Because I have to be the worst in the world at cooking rice. Every single time I’d cook rice, it would come out a big pot of mush. I thought it was impossible to get perfect, individual grain rice without a rice cooker. That is, until I discovered the secret to cooking the perfect pot of rice.

How to Cook the Perfect Pot of Rice

So what’s the secret? The directions on the package are a lie! A big lie! I have yet to follow the directions on any rice package and have the outcome I want. However, I have discovered the perfect rice cooking formula and since implementing it, there hasn’t been a pot of mushy rice in my house. And there’s no rice cooker needed!

What’s the lie rice packaging has been, and is still, telling us? Most packaging says to use 2 cups of water for every cup of rice. Wrong! This is why my rice used to come out so mushy. That’s just too much water. You only need 1 1/4 cups of water for every cup of rice you’re cooking. My favorite Jasmine rice indicates to use 1 1/2 cups of water, which is closer, but still not quite perfect.

How to Cook the Perfect Pot of Rice

Use this rice cooking formula on ANY type of rice and you’ll never have mushy rice again.

  1. Combine water and dry rice in a pot, over medium heat. (1 1/4 cups of water for every cup of rice)
  2. Cover and cook until it comes to a rolling boil. Then reduce the temperature to low.
  3. Once the water has completely reduced, turn the burner off, stir the rice, cover and let sit for 10-15 minutes. Letting it sit covered will allow the rice to steam itself done.
  4. Enjoy the perfect pot of rice!

*Note: It’s important that you stir the rice once the water has reduced. If you don’t stir, you will end up with uncooked grains along the top.

Get Kids Cooking in the Kitchen with Kidstir

Do you have a child who loves to help in the kitchen, but you can’t really find safe tools for him to use, or even kid-friendly dishes he can make? This is exactly how I feel about my son. He so badly wants to help me in the kitchen, but when I’m cooking there’s not much he can really help with. In the past few weeks, though, this has changed! I’m here to tell you that it’s possible to get kids cooking in the kitchen with a little help from Kidstir.

What is Kidstir?

Kidstir is a monthly subscription box for kids that offers fun, kid-friendly recipes they can make themselves (mostly). Each month Kidstir sends three new recipes that are perfectly curated for little hands. Each recipe is hole punched to fit in the Kidstir cookbook binder, literally allowing kids the opportunity to build and create their very own book of recipes. How cool is that?!

And not only does Kidstir send the recipes, but in the box you’ll also find kid-safe kitchen tools. Think small ice cream scooper, plastic sandwich/spread knife, mini whisk, pot holder, etc. Each recipe comes with a kitchen utensil that needs to be used and if no utensil is included, then there’s always something extra special for that recipe, like themed stickers or straw toppers, depending on the recipe.

The 1st shipment includes:

  • A special cookbook binder to collect monthly recipes, foodie pages, games, and activities.
  • 3 step-by-step recipes covering all food groups.
  • 3 educational foodie pages.
  • 2 kid-sized cooking tools and themed activity materials.
  • A digital and printed shopping list.
  • 3 fun games and puzzles.
  • An e-newsletter packed with recipes and printables.

Kidstir in Action

There’s no surprise, my son is over the moon about having his own cookbook and being able to help out much more in the kitchen. And I’m not going to lie, I didn’t realize there were so many things I could be teaching my son about cooking and letting him do. Don’t get me wrong, there are still things I need to do, like cutting things with a knife, but since he started getting Kidstir I’ve been delegating a lot more cooking tasks to him.

A little over a week ago we went apple picking and it just so happens that one of my son’s new Kidstir recipes was Awesome Apple Crisp. It could not have been a more perfect time to give this recipe a try. So we pulled together all the ingredients, including our freshly picked apples and we got to work.

While I still did the apple peeling and cutting, my son was able to handle the rest. I helped identify the correct measuring cups for each ingredient and from there he was able to create the crispy topping, mix it up, and put it all together. Then using the cute little doggy potholder that came in his Kidstir box to use with this recipe, he helped carefully put the dessert in the oven.

The final result was delicious! The recipe included ingredients and directions for making our own whipped topping, but we cheated a little and bought store-ready whipped topping instead. Nonetheless, the whole family enjoyed our fresh picked apples and the Awesome Apple Crisp my son made, and we couldn’t have been more proud of his accomplishment. He was pretty excited about it too!

Peachy Green Smoothie + Alkamind Boost

Mornings are about to get really rough for me. My son starts school tomorrow and that not only means early mornings for him, but early mornings for me too. Ugh! I like being able to sleep in if I want to. There’s no doubt I’ll rely a lot on my morning coffee, but after a couple of hours I’m going to be in major need of an energy boost. With some assistance from Alkamind Daily Greens, I’m confident my Peachy Green Smoothie will be the perfect pick-me-up I need.

I’ll be the first to admit that when I’m rushing around and have what feels like the longest to-do list ever, I don’t always reach for healthy snacks. But with school starting and early mornings beginning soon, I need an easy way to implement healthy, energizing snacks into my day. That’s exactly what my Peachy Green Smoothie is, with a little extra superfood boost from Alkamind Daily Greens.

Peachy Green Smoothie + Alkamind Boost

Ingredients

  • 1 cup fresh or frozen spinach
  • 1 banana
  • 1/2 cup fresh, frozen or canned peaches
  • 1/4 cup milk
  • 1/2 cup plain yogurt (peach or vanilla flavor works well too)
  • 1 packet Alkamind Daily Greens
  • 1/2 cup ice

Directions

  1. Combine the packet of Alkamind Daily Greens into the milk until well mixed.
  2. Blend all ingredients and the milk mixture in a blender.
  3. Enjoy!

*Note: If you skip step 1 and go straight to blending everything, you may find the Alkamind Daily Greens don’t completely incorporate, and you’ll end up with dry flaky-like textures in your smoothie.

Easy Cream Cheese Marble Brownies + #BrownieBonanza Giveaway

Easy Cream Cheese Marble Brownies + #BrownieBonanza Giveaway

~Thank you to BulbHead for providing me with a Red Copper Brownie Bonanza for review. This post also contains affiliate links, in which I will receive a small commission for your purchase. As always, opinions are still 100% my own.~

I really enjoy making sweet treats from scratch, but sometimes a few shortcuts aren’t bad either. This was definitely the case when I made brownies this weekend. I’ve been so busy, but wanted to treat my family to something fun and tasty, so I pulled out all the shortcuts I could to make some Easy Cream Cheese Marble Brownies.

The first shortcut? Using a box brownie mix. I have no shame in admitting that I actually save money and time by sometimes using a box brownie mix. But the taste is still there so my family gets to enjoy the chocolatey treat all the same. Whether you’re loyal to baking from scratch, or use a box brownie mix, there is no judgment here.

Easy Cream Cheese Marble Brownies + #BrownieBonanza Giveaway

The second shortcut? My new Red Copper Brownie Bonanza from BulbHead. Ya’ll! This is a total game changer when it comes to baking brownies. You will never again have to hear your kids complaining about the other one got a bigger piece of brownie because with the Brownie Bonanza, each and every brownie is the same size. And not only that, it’s so simple to get these perfect brownies at no extra effort from you.

Just how does Brownie Bonanza give you the perfect brownies each and every time? Let me show you.

Easy Cream Cheese Marble Brownies + #BrownieBonanza Giveaway
Brownie Bonanza comes in 4 pieces – pan, tray, grid, and cooling stand (not shown).

Simply place the tray into the pan, and for my Easy Cream Cheese Marble Brownies, mix up the box brownie mix per the box instructions and pour it over the tray.

Easy Cream Cheese Marble Brownies + #BrownieBonanza Giveaway

Then mix up the cream cheese topping (full recipe below), dollop spoonfuls atop the brownie mix, and swirl it around. Swirl it up/down, left/right, around in swirls, however you want to.

Easy Cream Cheese Marble Brownies + #BrownieBonanza Giveaway

Now, this is where the magic happens. Insert the grid for those perfect sized brownies and bake according to the box instructions.

Easy Cream Cheese Marble Brownies + #BrownieBonanza Giveaway

When the brownies are done baking, remove them from the oven and let them cool. Only remove the grid once the brownies have cooled down. Aside from touching to know they’re cool, you’ll also notice the outsides of the brownies separate from the grid.

The ceramic nonstick, anti-scratch surface is one of the fun features of the Brownie Bonanza. The grid slides right out, leaving you with 18 perfectly sized brownies. I guess I should also mention that even though it’s a nonstick surface, I still took extra precaution and sprayed the pan and grid with nonstick spray.

Easy Cream Cheese Marble Brownies + #BrownieBonanza Giveaway
Just look at those brownies! We’ve already finished off the ones I made over the weekend, but I think I need to make some more.

To make serving just as easy, place the cooling rack underneath the pan/tray and the tray of brownies will separate from the pan. Now all that’s left to do is enjoy!

Thai Curry Lime Shrimp

This Thai Curry Lime Shrimp recipe is an easy way to have a taste of Thailand right in your own home! #recipe #ThaiCurryLimeShrimp #Thai

Thai food is one of mine and my boyfriend’s favorites. We order it all the time and each time we do, I think to myself I need to figure out how to incorporate the bold and vibrant Thai flavors into dishes at home. And that’s exactly what I’ve done with this Thai Curry Lime Shrimp.

I cannot even begin to tell you how amazingly delicious it is. The curry offers up some heat and the lime adds a little sweetness. The two flavors are perfect compliments to each other. And it’s just like summer – a little hot and spicy, but sweet all the same!

If you’re wondering about the Thai Green Curry Sauce, it can be purchased at Aldi. At least, that’s where I get it. I don’t know if it’s available in other stores, but if it’s not and you don’t have an Aldi near you, the sauce can easily be substituted with a different curry sauce or maybe even try a sweet chili sauce.

When you try the recipe, come back and let me know what you think! I hope you enjoy it as much as we do!

Strawberry Streusel Squares Made from Our Freshly Picked Strawberries

Last week we went strawberry picking and came home with more strawberries than I knew what to do with. So I baked us up some Strawberry Streusel Squares and they were delicious! #recipe #strawberrypicking #strawberries

Last week I took my family strawberry picking for the first time. It was a great way to get everyone out of the house and enjoy a little family time together. It was a simple outing, but the kids had a lot of fun picking their own fresh strawberries. And though my son doesn’t eat them (because of the picky eater he is), even he enjoyed it.

We arrived at Farms View Roadstand sometime in the afternoon. Luckily, it was a really nice day out with temperatures in the high 60’s, the perfect day for strawberry picking. The staff kindly gave us the rundown and directed us to the strawberry plants out in the field. Then we were off!

Wonder Woman lost her patience and ate a few strawberries while in the field.

I had no intention of picking and buying as many strawberries as we did, but once we saw them and got to work, we had a box full in no time. We bought just over 2.5 lbs. of strawberries!

When we buy strawberries from the store, about half of the package typically goes bad before we get around to eating them, so I had no idea what we were going to do with all of these. But we’ve had no problem this past week going through the 2.5 lbs. we picked from the farm.

When we got home, I decided to bake us up some Strawberry Streusel Squares and boy were they delicious. They were gone by the next day!

These Strawberry Streusel Squares will have your family working hard on the farm, growing and picking their own fresh strawberries for their favorite spring time treat!
Ingredients
  • ¼ cup brown sugar
  • ½ cup white sugar (break down into ¼ cups)
  • 1½ cups of flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ tsp cinnamon
  • ½ cup butter (1 stick, cold and firm)
  • 1 egg (beaten)
  • 1 tsp vanilla
  • 2 cups freshly chopped strawberries
Instructions
  1. Preheat oven to 375 degrees and prepare a square dish by lining it with parchment paper (if you don't have parchment paper you can also spray the dish with non-stick spray). Parchment paper allows for quicker cooling time and easy cutting.
  2. In a bowl, mix the dry ingredients (brown sugar, white sugar, flour, baking powder, salt, cinnamon). Only use ¼ cup of the white sugar.
  3. Add the butter, egg and vanilla to the bowl and do a rough mix. It's easier to slice the stick of butter before adding it to the bowl and I suggest using your hands to do the rough mix. The mixture should be a thick, crumbly consistency when ready.
  4. Place half of the mixture into the bottom of the dish. Mash it into the dish so it creates a solid base.
  5. In a separate bowl, mix together the strawberries and a ¼ cup of white sugar. Add the strawberry mixture to the dish, spreading it evenly.
  6. Crumble the remaining streusel mixture on top of the strawberries. It's okay if the remaining mixture doesn't cover the entire top of the strawberries.
  7. Place in the oven for 35 minutes and when done remove the dish from the oven. Then, using the parchment paper, remove the treat from the dish and place on a cooling rack.
  8. Let it cool completely before cutting into squares (9 or 12 squares).

This recipe only used up a small portion of the strawberries we had picked, so I had plenty left to make a second batch of Strawberry Streusel Squares. As for the rest of them, we’ve just been snacking on fresh strawberries all week. I can’t wait until we go strawberry picking again!
