You know what I hate? Going to the refrigerator and finding that what I was looking forward to eating or drinking is gone. At this point, living in a house of four, I feel like it’s just a fact of life.

Homemade Bacon, Egg & Cheese Fries

These Homemade Bacon, Egg & Cheese Fries will have your taste buds thanking you. Breakfast, lunch or dinner, they're great any time of day.
Ingredients
  • 2-3 cups of vegetable oil
  • 4 medium potatoes
  • 1 cup of flour
  • 2 Tbsp of garlic powder
  • 2 tsp of seasoning salt
  • 2 slices of bacon
  • 3 large eggs
  • ½ cup of cheese
Instructions
  1. Heat/prepare the oil in a pan or deep fryer.
  2. In a bowl, mix the dry ingredients (flour, garlic powder, seasoning salt).
  3. Slice the potatoes into thin strips and coat them with the dry ingredients.
  4. Fry the potato strips until tenderly crisp.
  5. While the potatoes fry, cut the bacon into small pieces and fry until crispy.
  6. Just before ready to plate, fry the eggs over easy.
  7. To plate, start with a layer of the fried potatoes and sprinkle with cheese. Then layer on the fried eggs, and top with the crispy bacon pieces and more cheese.
Notes
To really make these over the top, load them with sour cream and green onions as the final layer.

Sooo, have you figured out yet that we are totally a Gerber family? I’ve been talking about our love for Gerber for a few weeks now. My mom has told me that I grew up on Gerber baby products, my son grew up on Gerber baby formula and purees, and now my daughter is in love with just about every Gerber food that exists. Yeap, I think it’s safe to say we’re a Gerber family.

Because I have two kids, I tend to compare them when it comes to reaching different milestones and while my kids are like two peas in a pod and look like twins born 3 years apart, they still have their own personalities and differences. One such difference is as I just mentioned, my son was given baby formula, but my daughter has been breastfed.

So while my son was getting all the nutrients he needed through his baby formula, one thing my daughter is lacking from being breastfed, is not getting enough iron. No matter how much iron intake I have, it doesn’t affect the amount of iron in my breast milk.

Where is my daughter going to get the iron she needs? She’s going to get it from GERBER CEREALS! Told you we are a Gerber family, haha.

Easy 4 Ingredient BBQ Chicken Quesadillas

I don’t know about your family, but mine eats a lot of chicken. Quite frankly, it’s an affordable protein, and there are many different ways it can be cooked and a countless amount of flavors it can be enjoyed with.

But sometimes we have leftover chicken and really don’t want the same thing two nights in a row. That’s when I turn to my easy 4 Ingredient BBQ Chicken Quesadilla recipe. While these can be enjoyed as a first meal, it’s a big time saver for me when I make it using leftover chicken and it helps me minimize how much food we waste.

So today, rather than telling you what I’m making time for, I’m going to share my 4 Ingredient BBQ Chicken Quesadilla recipe. It’s something that saves me time and allows me to fit other important things into my busy day.

Ingredients:

  • 1.5-2 leftover cooked chicken breasts
  • 16-20 small wheat tortillas (1, 16 oz. pack)
  • 2 cups honey BBQ sauce
  • 8-10 slices of cheese

Directions:

  1. In a blender, chop the leftover chicken breasts.
  2. Heat a skillet on medium-high heat, add a little olive oil and heat the chopped chicken.This 4 Ingredient BBQ Chicken Quesadilla #recipe is perfect for using up leftover chicken AND it's a quick and easy dish my whole family enjoys.
  3. Transfer the warmed chicken to a bowl and mix in 1 cup of BBQ sauce. If you like a lot of BBQ sauce, feel free to add more.
  4. Taking 2 wheat tortillas, spoon some of the remaining BBQ sauce onto each and spread it around.This 4 Ingredient BBQ Chicken Quesadilla #recipe is perfect for using up leftover chicken AND it's a quick and easy dish my whole family enjoys.
  5. Spoon some of the BBQ chicken mixture onto one of the tortillas.   6. Place 1 slice of cheese on top of the BBQ chicken. You can also use shredded cheese if you prefer.   7. Place the second tortilla on top of the cheese.
  8. Spray the skillet with non-stick spray (I like to use olive oil spray) and heat on medium-high.
  9. Cook the quesadilla on both sides until golden brown.
  10. Let cool, cut into fours (I use a pizza cutter) and enjoy.
*Note: You can also use the large tortillas. I have used them before and rather than using 2 tortillas to make a quesadilla, I simply fold the large tortilla in half. Just spread the BBQ sauce over the whole tortilla and then place the BBQ chicken mixture and cheese on only half of it. Then fold the other half over and cook.

This recipe yields 8-10 quesadillas, all depending on how much filling you use. And as a finishing touch, I love to dip my BBQ Chicken Quesadillas in ranch dressing or even sour cream. Yum!

Snack time in my house could very well be my kids’ favorite time of day. They run ragged all day, so when snack time rolls around they’re more than ready to be refueled. My toddler now thinks she can eat everything her older brother does and she certainly wants to.

The problem is that he’s such a picky eater to begin with and only eats certain foods – junk foods (hopefully he’ll grow out of this stage soon). So while my toddler may be able to handle the consistency of some of the foods her older brother eats, they’re not the healthiest foods for her.

Crockpot Salisbury Steak Recipe

This Crockpot Salisbury Steak #recipe is one of my favorites in the fall. It's really easy to make and the whole family loves it.

It’s fall ya’ll! That means my crockpot is going to be working hard over the next few months. In fact, I broke it out last week to make some Beef Stew and today I’m making Salisbury Steak. I ALWAYS make time for crockpot meals! Besides, they save me a lot of valuable time in the day so I can do other things.

I won’t say everything I’ve ever made in the crockpot was tasty and worth making again, but this Salisbury Steak is on point! So why not share the recipe with you? It’s actually pretty easy to make and one of my favorite crockpot dishes.

Ingredients:

  • 2-2.5 lbs. ground beef
  • 1 pack of onion soup mix
  • 1/2 cup of milk
  • 3/4 cup of bread crumbs
  • 2 eggs
  • 1/2 cup of flour
  • 1 pack of brown gravy mix OR mushroom gravy mix
  • 1 can of french onion soup
  • 1 can of cream of mushroom soup
  • 1 can of mushrooms (or 2 small ones)

Directions:

  1. Heat a small amount of olive oil in a skillet, just above medium heat.
  2. In a bowl, mix the ground beef, onion soup mix, milk, bread crumbs and eggs.
  3. Form the mixture into patties.
  4. Cover the patties with flour and place in the heated skillet. Do not completely cook the patties, but just get a nice brown on the outside.This Crockpot Salisbury Steak #recipe is one of my favorites in the fall. It's really easy to make and the whole family loves it.
  5. Place the patties directly into the crockpot. You’ll have to stack them.
  6. In a bowl, mix the brown gravy mix, french onion soup, cream of mushroom soup and mushrooms (drained).

  8. Cook on high for 4 hours (or low for 6 hours).
  9. Serve with mashed potatoes, rice or your favorite side dishes.

In my family this recipe yields about 5-6 servings. We typically eat two patties and the kids eat one, and then we’ll have some left over for the next day.

How My Little One Indulges in Fall Flavors

One of my favorite things about fall is all of the amazing flavors – pumpkin, turkey, ham, sweet potatoes, roast beef, apples and any recipe that has crockpot in the title. I can’t wait to pull my crockpot out!

I wanted to see how well Sadee would like some of these same flavors, so I made time to try a quick mashed sweet potato recipe for her and topped it with Gerber 3rd Foods Lil’ Bits Garden Vegetable & Beef Dinner. It gives her a little taste of the sweet and savory flavors of fall, but in consistencies she’s able to handle at her age.

Mashed Sweet Potatoes with Gerber 3rd Foods Lil' Bits

This recipe allows your little one to experience the sweet and savory tastes of fall, while maintaining a consistency they're able to handle, and even introduces them to easy to eat, small pieces of solid food.
Ingredients
  • 3 small sweet potatoes (peeled and cubed)
  • ½ cup milk
  • 2 Tbsp maple syrup
  • 1, 5 oz. container of Gerber 3rd Food Lil' Bits Garden Vegetable & Beef Dinner
Instructions
  1. Boil the sweet potatoes for 20 minutes, until tender.
  2. Drain the sweet potatoes and return them to the pot.
  3. Mash the sweet potatoes, and mix in the milk and maple syrup.
  4. Place desired amount sweet potatoes in a bowl.
  5. Top with desired amount of Gerber 3rd Foods Lil' Bits Garden Vegetable & Beef Dinner.
  6. Let sweet potatoes cool before serving.

I’m happy to say, it was a big hit and Sadee loved it! She had no problem eating the small, solid pieces of carrots in the Gerber 3rd Foods Lil’ Bits Garden Vegetable & Beef Dinner, while the rest of the dish was a puree consistency. One thing I’ve tried to change in my diet over the past few years is to eat more fresh fruits and vegetables.  So far it’s been a lot easier than I thought it would be and I’ve learned so much about different ways of preparing and cooking different fruits and vegetables.

About 4 years ago, in an effort to lose weight I decided to look for a cookbook that had recipes that were low in carbs, fat and calories.  I came across Eat What You Love by Marlene Koch.

Not only is this cookbook great for weight loss, but the recipes were also great for controlling diabetes, which is something that runs in my family.  Up to this point I’ve avoided being diagnosed with diabetes and hope to be able to continue being diabetes free.

Every single recipe I’ve tried from Eat What You Love has been delicious and I use the recipes ALL the time.  One of the first recipes I tried was the “Blue Wave Smoothie” and it immediately became a favorite.  And now, 4 years later, I’m still enjoying a “Blue Wave Smoothie” about once a week.  It’s easy to make, requires only a few ingredients, uses fresh fruit and tastes amazing!

  • ½ cup of blueberries (fresh or frozen)
  • ½ cup plain nonfat yogurt
  • ½ cup light white grape juice
  • 1 Tbsp (or 2 packets) Splenda
  • ½ to ¾ cup crushed ice (only ½ cup if using frozen blueberries)
Instructions
  1. Place all the ingredients, except the ice, in a blender. Blend to mix.
  2. Add crushed ice and blend on high until the ice is completely incorporated.
Notes
This smoothie is also great without the ice.

I’m now well into week 3 of my Daily Burn adventure and thought I’d just give you a little bit of an update on how my first 2 weeks went.  And since I’ve had some time to try some of the Daily Burn recipes, I want to share with you one of my favorites so far.

Week 1

Well, I didn’t lose any weight the first week, but that didn’t get me down.  I noticed a major boost in energy, which is something that’s proven to be beneficial.  I’m staying up later at night and being much more productive than usual, and productivity is definitely a good thing when you’re a working at home mom of two.

The increased energy keeps me going during the day and unlike before, I don’t yearn for a nap every day (even though I never really got naps before anyways).  During my daughter’s nap time I can get some work done, or some blogging completed, and even get my daily workout in.

Week 2

Although there was a noticeable increase in energy during week 1, I was a little bummed that I didn’t lose any weight.  I didn’t let it get me down, though and decided to make some changes to my diet in week 2 while continuing with my Daily Burn workouts.

I cut out as many carbs as I possibly could.  No bread, no rice, no potatoes, no pasta.  Well, I did say as many carbs as possible – I did have a small portion of mashed potatoes and rather than white rice, I opted for brown rice one evening with dinner.  But I was able to manage without any bread or pasta.

In week 2, not only did my energy stay boosted, but I lost 3 pounds! Woohoo!  Now I’m working on week 3 and killing it.

Daily Burn Recipe: Crustless Vegetable Quiche

I’ve had a little bit of time to try some of the Daily Burn recipes and so far I am loving the Crustless Vegetable Quiche.  No joke, I could have eaten the whole thing by myself.  Luckily for my boyfriend, I saved him some and then to my surprise, he finished it off.  Even my 10 month old had a few bites.  It really is delicious!

There’s a lot of ingredients that go into it, but it’s actually pretty easy to make.  Don’t let that fancy “quiche” word scare you.  This is the first quiche I’ve ever made and it was definitely love at first bite!

Making Time to Try a New Recipe: Sweet Potato Wedges

I haven’t ever really been interested in eating sweet potatoes unless they were in a sweet potato pie.  But since starting to change my everyday diet, sweet potatoes have been on my mind.  The problem is I really don’t know how to cook them in a way that I’ll enjoy the taste.

I started out simple by just baking them without any seasoning or anything added, and I just didn’t like them plain.  I could manage, but it’s not something I’d eat on a regular basis.

Then just recently I got the opportunity to try the new Daisy Sour Cream squeeze pouches and when I received the coupons to purchase the sour cream, the package had a few recipes included, one of which was for Sweet Potato Wedges.  I couldn’t wait to try the recipe and I’m so glad I did because they are a new favorite of mine and my family’s!

Since they’ve become a favorite of ours, I thought I’d share the recipe with you.  And obviously since the recipe came with my sour cream coupons, the dish suggested using Daisy Sour Cream as a topping or type of dip.

At first I wasn’t so sure about mixing sour cream with sweet potatoes, but I was pleasantly surprised at how tasty it was.  You really can’t knock something until you try it and I highly suggest trying it!

Sweet Potato Wedges

This Sweet Potato Wedges recipe is one the whole family will love, especially with a little Daisy Sour Cream to top off the wedges.
Ingredients
  • 3 medium sweet potatoes
  • 2 Tbsp. vegetable oil
  • 1 tsp. onion powder
  • 1 tsp. paprika
  • ½ tsp. salt
  • ½ tsp. dried oregano
  • ¼ tsp. sugar
  • ¼ tsp. garlic powder
  • 2 green onions, sliced
  • ¾ cup Daisy Sour Cream
Instructions
  1. Heat oven to 400*.
  2. Cut sweet potatoes in 1" wedges and arrange in a single layer in 10" x 15" nonstick baking pan with sides.
  3. Drizzle potatoes with oil, turning to coat.
  4. In small bowl, mix onion powder, paprika, salt, oregano, sugar and garlic powder.
  5. Sprinkle mixture over potato wedges.
  6. Bake 15 minutes, then turn wedges and cook an additional 5-10 minutes.
  7. Arrange on a serving platter, and garnish with green onions and Daisy Sour Cream.

Let me add, the new Daisy Sour Cream squeeze pouches are amazing.  There’s no waste and you can get just the right amount of sour cream you want, in the exact location you want it.  Like with tacos, you typically want an even stream of sour cream, but spooning it out of a container and dolloping, doesn’t exactly give you that nice even distribution.

With the squeeze pouch you also don’t get that yucky crusty sour cream around the lid like you do with a container.  And on top of all this, the squeeze pouches last much longer, like a month longer.  When I purchase a sour cream container, I usually have 3-4 weeks at best before it expires, but with the squeeze pouch I have 2 months before it expires!
