No Bake Reese's Peanut Butter Cheesecake

With Valentine’s Day just around the corner, I’m sure many people are looking for something sweet to give their special someone.  We hear all the time that homemade gifts are better than store bought gifts, but let’s face it – that’s not necessarily always true.

BUT, it is SO true when it comes to this No Bake Reese’s Peanut Butter Cheesecake.  I mean, need I say more?  Reese’s Cups. Peanut butter. Cheesecake. HELLO?!  My mouth is watering just looking at a piece.

And I don’t know about you, but I love gifts that are edible.  Don’t get me wrong, flowers and jewelry are nice and all, but give me something yummy to eat and you have my attention.

So, if you’re looking for the perfect Valentine’s Day gift or even just something to send things over the top, this recipe is for you.  It’s all homemade with nothing but love, straight from the heart.

No Bake Reese's Peanut Butter Cheesecake

This delicious cheesecake is super easy to make at home and because it's no bake, you really can't mess up.
Ingredients
  • 25 Oreos
  • 5 Tsbp melted butter
  • 3, 8 oz. blocks of cream cheese (24 oz. total)
  • 1.5 cups creamy peanut butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 8 oz. Cool Whip (1 tub)
  • 25-30 Reese's Miniatures
  • Optional: Chocolate syrup
Instructions
  1. Refrigerate the Reese's Miniatures so they keep their shape.
  2. Using a food processor (I used my Nutribullet, haha), crush the Oreos and transfer to a bowl.
  3. Add in the melted butter and mix well.
  4. Press the Oreo crust mixture into the bottom of a spring-form pan (a pie dish works as well).
  5. Refrigerate crust for at least 30 minutes to set.
  6. Mix together the cream cheese, peanut butter, powdered sugar and vanilla, until well blended.
  7. Fold in the Cool Whip until well mixed.
  8. Cut the Reese's Miniatures into quarters and fold half of them into the mixture.
  9. Pour the mixture over the Oreo crust and spread it evenly.
  10. Place the remaining cut up Reese's Miniatures across the top (or around the outer ring if you want to be fancy).
  11. Refrigerate for 5 hours.
  12. Remove spring-form pan's outer shell and enjoy!
  13. Optional: Add chocolate syrup over the top.
Notes
If you want to put a little bit of a spin on it, use crunchy peanut butter instead of creamy.

 

Making Time for “The New”

What better way to get things rolling, than to share some things I’ve done this month as part of my New Year’s resolutions?  I suppose I should start by telling you that my most important resolution this year is to try something, do something, eat something, go somewhere, new.

This year I’m making time to do “the new.”

As the month comes to an end, I have the opportunity to reflect and think about how I’ve done “the new.”  So…what have I done?

Well, first and foremost, I’ve started this blog.  So exciting!  It’s been on my mind for months now and to finally have it up and running, and exactly how I’ve envisioned it, I couldn’t be happier.

Evio's Pizza & Grill

As a family, we tried a “new to us” local restaurant, Evio’s, that I’ve wanted to try for three years now.

Yes…three years I’ve been waiting to try this pizza/grill spot that’s literally a few minutes down the road.

I even had a discount for some time for this place through Restaurant.com and it sat around unused for so long that the restaurant stopped taking them!

What took us three years?  Who knows.  We were surely sleeping on it, but we’re glad we finally tried it because the food is delicious.  It’s definitely a new contender for when we want to eat out or even order for pick up.  Pizza, burgers, pitas, wings…om nom nom.

Speaking of food, I also made my very first homemade cheesecake and boooooooy was it good.  I’ll have to share the recipe (stay tuned) because even if you don’t usually care for cheesecake, you will LOVE this one.  It’s a no bake Reese’s Peanut Butter cheesecake.  Go ahead…I don’t mind if you drool all over your computer, haha.  No judgment here.

So if you ask me, it’s been a great first month of making time for “the new” and I’m already planning for February which is going to be awesome.  This is one resolution I’ll be keeping for sure.
